В их числе:непрерывно действующие фильтровальные шнековые центрифуги, пульсирующие, инерционные, с вибрационной выгрузкой осадка и отстойно-шнековые центрифуги. Это – наиболее эффективное оборудование, используемое в пищевой и мясной промышленности и обеспечивающее высококачественное разделениежидких неоднородных систем [<xref ref-type="bibr" rid="cit1">1</xref>].  </p><p>В настоящее времянаучные исследования проводят только на центробежном оборудовании, работающем непрерывно шире. При этом, изучают технологичесую и динамическую стороны процесса центрифугирования. Считается, что данных исследовательских работ недостаточно.Особенно это актуально для мясной промышленности, где процессы цетрифугирования жидких систем недостаточно изучены. Это связано с тем, что мясопродукты представляют собой сложную коллоидно-дисперсную систему, состоящую из плотно прилегающей влаги и сухого остатка, обладающую большой адсорбционной способностью. Не в полной мере изучены качественные и количественне характеристики центрифугирования. Недостаточно уделялось внимание технологическим особенностям производства наряду с конструктивными особенностями оборудования. </p><p>В исследовательских работах геометрические размеры рассматриваются обобщенно и берутся на основе закономерностей среднего значения. Это не может в полной мере дать точное описание протекающего процесса. Данные факты свидетельствуют о том, что процесс разделения жидких  неоднородных систем в центробежном оборудовании все еще требует большого количества исследований. </p></abstract><trans-abstract xml:lang="en"><p>At present, many types of centrifugal equipment are used in various industries. Among them are: continuously working filter screw centrifuges, pulsating, inertial, vibrating sludge unloading and deposition screw centrifuges. </p><p>This is the most efficient equipment used in the food and meat industries and providing high-quality separation of liquid heterogeneous systems. At present, scientific research is carried out only on centrifugal equipment with continuous wider operation. At the same time, it studies the technological and dynamic aspects of the centrifugation process. This research work is considered insufficient.This is especially true for the meat industry, where the processes of cetrifugation of liquid systems are not well understood. </p><p>This is because meat products are a complex colloidal-dispersed system consisting of dense moisture and dry residues with great adsorption capacity. </p><p>The qualitative and quantitative characteristics of centrifugation have not been fully studied. Along with the design features of the equipment, sufficient attention was not paid to the technological features of production. In research papers, geometric measurements are considered in a generalized form and are obtained on the basis of average patterns. This cannot provide a detailed description of the current process.
