Одним из ключевых факторов для обеспечения безопасности пищевых продуктов предоставляет упаковка. Увеличение количества упаковочных материалов для пищевых продуктов создает спрос на продвижение продуктов и брендов, безопасных для употребления. Порча пищевых продуктов из-за низкокачественного вида упаковки приносит огромный убыток не только предприятиям, но также и потребителям. Несмотря на эффективность существующих практик, перед розничной торговлей все еще стоит множество проблем, включая используемые материалы и их возможное взаимодействие с продуктами питания. К тому же все еще актуальна проблема переноса вредных материалов из упаковочных материалов в продукты питания. В данном исследовании представляются результаты определения миграции тяжелых металлов, используемых в различных видах упаковок пищевых продуктов в Республике Казахстан. Определение миграции тяжелых металлов было проведено в водной вытяжке методом атомно абсорбционной спектрометрии. Практическая ценность приведенных исследований заключается в изучении содержания свинца, цинка и хрома в составе различных видов бумажных пищевых упаковок. В результате исследования были выявлены, что среднее количество миграции хрома в пищевых упаковках соответствовал требованиям, установленным в ТР/ТС 005 2011 «О безопасности упаковки», значения миграции свинца и цинка были близкими к пределам, установленным в Техническом Регламенте, что следует рассматривать как потенциальный риск для здоровья человека в случае, если они могут быть повторно использованы без какой-либо предварительной обработки в качестве источника вторичного целлюлозного волокна.</p></abstract><trans-abstract xml:lang="en"><p>Food quality and safety is one of the most important aspects of the food industry. One of the key factors to ensure food safety is packaging. Increasing number of food packaging materials is creating a demand for promoting products and brands that are safe for consumption. Food spoilage due to poor quality packaging causes huge loss not only to businesses but also to consumers. Despite the effectiveness of existing practices, retailers still face many challenges, including the materials used and their possible interaction with food. In addition, the transfer of harmful materials from packaging materials to food is still an issue. This study presents the results of determining the migration of heavy metals used in different types of food packaging in the Republic of Kazakhstan. Determination of heavy metal migration was carried out in aqueous extract by atomic absorption spectrometry. The practical value of the above research is to study the content of lead, zinc and chromium in the composition of various types of paper food packaging.
